Koichi Katsumata

Born in Fujiyoshida City, Yamanashi Prefecture in 1985. Graduated from Ecole Tsuji Tokyo. Worked as a pastry chef in Japan, France, and Australia. Opened “Yama” in Ebisu in July 2019. Moved to Shirokane in November 2022.
The restaurant has only six seats at the counter, where you can watch the chef prepare your food while having a conversation with you.
The chef also adds humor to his explanations of the dishes, making the dining experience not only delicious but also enjoyable to the ears.
The chef himself travels around Japan to select the ingredients for his dishes.
Course
The restaurant only offers a seasonal course menu. For example, in January and February, they offer a strawberry course, and in March and April, a cherry blossom course, all in accordance with the current season. The price ranges from around 20,000 yen, varying by course. All courses come with non-alcoholic pairings. Although it may seem pricey at first, the value is worth it. It can be difficult to make a reservation as the restaurant is often fully booked.

*5 Types Of Strawberries
*5 types of strawberries The beginning of a course using five types of strawberries abundantly, including types of strawberries that you have never seen before.

*Fluffy strawberry candy like snow Fluffy strawberry candy like snow, paired with lemon verbena tea.

*Sansyo Ice Cream
I haven’t had much of this, Sansyo ice cream. On top is a crispy candy.

*Butterbur Ice Cream
Butterbur ice cream with snow rabbit sauce on top. The bitterness of butterbur and the acidity and sweetness of the snow rabbit sauce match perfectly and taste delicious.

*Strawberry Terrine
A terrine made up of 5 layers, with champagne jelly that perfectly matches the acidity of the strawberries and tastes delicious. Drizzling pistachio sauce on top adds another layer of flavor.

*Cheese-flavored Blancmange
As a finishing touch, it is served with tomato juice sherbet, olive oil, and a pinch of salt. It is refreshing and delicious.

*Warm Pie and Cold Ice Cream
The combination of warm pie and cold ice cream is amazing.

*You might think it’s strawberries, but it’s actually pistachios inside. It contains two types of pistachios, pistachio sauce and pistachio cream, instead of strawberries at the end.
